Zucchini??

Hi all,

My garden is full of zucchini and I wondered if it would be ok to eat that for a P2 veggie? Has anyone tried it and lived to tell about it?

Why don't you try it and see how it works for you, then let us know how it affects your weight loss. I know that I would love to have zucchini in P2, I just haven't gotten around to trying it yet.

Zucchini is considered in the moderate group as far as carbohydrates is concerned and so is spinach which is one of our allowed veggies so I have eaten steamed or grilled zucchini and had no problems with it but I don't have it often, if that's any help to you.

It didn't do a thing.... I can eat it. I'm actually down 1/2 lb today. I also had some mushrooms. When I went to calorie king the ratios of fats, protien, and carbs looked very similar to chard....

We call it baby marrow in South Africa and it is one of the veg's that keeps me sane, I slice them in 4 strips, in the microwave for 1 min on high and just love them - have had no problems.

I'm on Round 2 and I felt I could loosen up a bit and experiment a little.

Last week, I made a legal spaghetti sauce and made zucchini "noodles". Oh my goodness, I really was in Heaven!

I use this gizmo to make the noodles:

Item # K7702 ~ Fuller Kitchen Solutions Manual Vegetable Curler & Slicer. I got it at www.qvc.com

This makes spaghetti noodle like zucchini strips (about 3 feet long). I make up these zoodles and then lay them on a big kitchen towel to air dry for about 3-4 hours.

We had spaghetti and zoodles again tonight. Last week I was down the following day, so we're going to try and incorporate this weekly.

Wish I could say I made up that name, but sigh, I didn't winking

No, I don't mix anything with them. I "spiralize" them and call it good. I did take a picture of them yesterday, spread out to dry a bit - but I don't know if there's a way to post it?

So, that's it - just the raw zoodles in a bowl (then I cut them because they really are 2-3 feet long) and plop the sauce on top. Others do lightly sautee them, but we prefer them raw, dried.

My husband has never been a pasta fan (strange person!), but he loves these. *Ü*
