Ran in late from rehearsals a couple nights ago, ravenously hungry (9pm). I had read in several places about coconut oil, and when I went to get some, also found coconut oil cooking spray. I sauted an onion in a little of the spray, mixed up 1 egg + 1/4 cup of Egg Beaters (0 fat; 40 cal) poured it on top. Fast and yummy, but okay? I know I read about both products in the posts, but they were casual mentions. Is there a general concensus on them? (Sorry; can't tell you if I lost or not; been having scale accuracy issues).
