it is really important to eat the different foods that Dr Simeon's talks about - try to find something that you like, you will learn as time goes on to come up with good combinations that work for you - depending on where you live, fresh tomatoes go well with any protein, cucumbers - the english ones are excellent, celery is good to give you that crunch that you might be missing from crackers - grill asparagus are one of my favorites.
I personally don't do the walden farms dressings as I can't handle splenda and they contain splenda - check this forum for recipes there are some good salad dressing recipes on here that might appeal to you. best of luck to you in your weight loss.
